A quick and easy short cut to a beautiful gluten free desert.
Do you have days when you walk into the kitchen and think I’m in the mood for xxx. Cue up the music, clouds part, a shining light sparkles across all the necessary ingredients in the pantry and it all falls into place. Yeah – that hasn’t happened to me yet but I’m holding out on for that faint-micro-glimpse of hope when magic truly invades my kitchen and whips up confectionery dreams. Until that time happens I’ve learned to roll with what’s on hand.
I call it creative cooking.

Voila; my short cut to an easy gluten-free fruit pizza.
I had berries I needed to use or freeze and they were so beautiful that I wanted to enjoy their fresh flavor. The thought of making a tart crossed my mind but I quickly pushed it aside (I’m really trying to minimize gluten in my diet due to allergies). But I did have plain frozen gluten-free pizza crust in my freezer.
Necessity is the mother of invention.
I brushed butter on the crust, sprinkled a dusting of sugar on top before popping it into the oven. While the crust baked I whipped a block of cream cheese with a half cup of powdered sugar for the first layer. I don’t like overly sweet and tend to cut down on the sugar. But you can use more to taste.
While the crust cooked I rinsed the black berries and pulled out the strawberries from the fridge which I had sliced up and sprinkled with sugar the night before. This gave the strawberries a lovely sweet glaze perfect for topping the pizza with.
What’s great about a fruit pizza is you can use whatever fruit you have on hand. And then it’s just a matter of building your toppings. Use your imagination. For mine I slathered the cream cheese on top of the crust and layered the berries on top of it. That’s it. And it was so GOOD! I loved the light fluffy crust and it paired perfectly with the fruit.
I didn’t even miss the gluten!
