Day 90 – #100HappyDay Challenge
Sunday is for baking or making pancakes… For my Sunday funday, I decided to take a stab at making pineapple upside down pancakes, similar to those I enjoyed at Snooze…except mine are gluten free. What can I say? I’m easily entertained especially when it comes to playing in the kitchen.
Yes, I know, I’m taking a shortcut by using a pancake mix. But I really like Bob’s Red Mill Gluten Free Pancake Mix and its breakfast for one – me. I’ve been using this mix for a few years since I’ve been minimizing (or trying to minimize) my gluten intake. Trust me, if you haven’t tried it, maybe take the plunge and pick up a bag. I added an affiliate link to amazon just so you can take a look at the bag and ingredients. It makes fantastic pancakes and waffles and you will not miss the gluten!
I mixed up the batter and let it rest while I carmalized the pineapple tidbits in a bit of butter (use real butter!) and a brown sugar. If you can get your hands on a fresh pineapple use that. But this morning I was using what was in my pantry, and a fresh pineapple is something I dont typically keep on hand.
Set the pineapple aside. Its time to make the pancakes. Ladle the batter on to your hot griddle – a pan works just as well. I added a tablespoon or so of the cool pineapples on top of the batter. Wait for the pancake to bubble before flipping it over to cook a few minutes on the other side. These came out a bit darker than I would have liked but, hey, that’s the way the cookie crumbles.
Here’s what I want to do a little different when I make this again. I will chop the pineapple a bit smaller, carmalize it, let it cool, then mix the bits into the batter. I think maybe if I had taken this route, I would have gotten a bite of pineapple in every bite. And who wouldn’t love that!
To keep it lighter, I didn’t make the pastry cream to top the pancakes. Instead I topped them with carmalized pineapples. I pulled out maple syrup but ended up skipping that as well. The carmalized pineapples and butter worked just fine.

They are so good. A little extra work to caramelize the pineapple but well worth it. Let me know how they turn out when you make them. They’re my favorite now!
Too true – especially true if you’re making Banana’s Foster pancakes too. I will for sure. Given all these Ohio snow storms – pancakes are in order!
